Call for increased vigilance following Salmonella salad link
The CIEH is calling for caution as pressure grows to disregard food date labels in a bid to cut food waste following new evidence that bagged salad leaves pose a potential salmonella threat.
New research published last week by Leicester University has revealed that just a small amount of damage to a bagged salad leaf can massively stimulate the presence of Salmonella. The study reveals that leached juices increase the pathogen’s capacity to form a strong wash-resistant attachment to the leaves.
The CIEH is warning that the findings make it even more important that ‘use by’ dates are adhered to, especially as consumers and food operators come under increasing pressure to cut food waste.
